Corn Salad with Chile and Lime

Green Goddess Pizza
corn meal or semolina for dusting
16 oz. store bought or homemade pizza dough
1 cup ranch dressing
1 head of broccoli cut into small florets
2 cups shredded mozzarella cheese
3 oz. fresh mozzarella log, sliced
2 cups arugula
1 large avocado peeled, pitted and sliced
1 teaspoon apple cider vinegar
1 tablespoon olive oil
salt and pepper
Preheat your oven to 475 degrees F. If you are using a pizza stone, place it in the oven.
On a pizza peel (or a large baking sheet), sprinkle a layer of corn meal. Form the dough into a circular shape, stretching and shaping where necessary.
Spread ranch all over pizza. Then scatter broccoli over ranch. Cover with shredded mozz and fresh mozz slices. Place the pizza in the oven and bake for 7-18 minutes, depending on crust thickness, or until the cheese is bubbly and brown. Remove from oven and let sit at room temperature for approximately 5 minutes.
In the meantime carefully toss together arugula, avocado, apple cider vinegar, olive oil, and a pinch each of salt and pepper. After 5 minutes, top pizza with the salad, slice, and serve.
