Grilled Corn with Hatch Chile Goat Cheese

8 ears of sweet corn, husks removed

½ cup sour cream

1/3 cup mayonnaise

½ cup cilantro, roughly chopped, plus more to garnish

1 tsp. chili pepper

½ tsp. sea salt

½ tsp. garlic powder

1 lime, zested and juiced

1 disk Cypress Grove Hatch Chile goat cheese, crumbled

Lime wedges, to garnish

Heat gas or charcoal grill.

Whisk together sour cream, mayonnaise, cilantro, chili pepper, garlic powder, sea salt, lime zest, and lime juice. Set aside.

Grill the corn: place the husked corn directly onto hot grill grates. Grill for 3 minutes per side, or until kernels begin to turn golden brown. Remove corn from grill and set on a plate.

Immediately brush the corn with a generous amount of crema mixture, sprinkle with crumbled goat cheese, and garnish with additional cilantro. Serve with lime wedges and enjoy!
