Hatch Chile and Herb Frittata Bites

Savory, filling, and perfect for on-the-go! These frittatas are super easy to prep ahead for a busy week. They keep for up to three days in the fridge, are freezer friendly, and are easily popped into the microwave when you get hungry!

8 eggs

1/4 cup milk

8 oz shredded cheese

2 tbsp chopped cilantro

2 tbsp chopped chives

4 Hatch chiles, roasted, peeled, seeded, and chopped

Salt and pepper

Cooking spray or olive oil

  1. Preheat oven to 425 degrees
  2. Lightly coat the chiles in olive oil and sprinkle with salt
  3. Roast for 5-7 minutes on each side until the chiles are blistered and slightly blackened.
  4. Once cooled, peel the skin off of the chiles, cut them in half and scrap out the seeds.
  5. Chop the chiles into small chunks and set aside.
  6. Crack the eggs into a large bowl and whisk until blended.
  7. Stir in the milk, cheese, herbs, chiles, salt, and pepper. Save a little bit of cheese and chopped chiles to sprinkle on top!
  8. Prepare a muffin tin with cooking spray or a small amount of olive oil and fill about 3/4 of the way with the egg mixture.
  9. Top with cheese and chiles and slide the pan in the oven.
  10. Bake for 35 minutes or until golden, puffed, and aromatic.
  11. Serve warm with salsa and fresh avocado for a healthy and delicious meal!

** Alternatively canned hatch chiles can be used for convenience!
