
Hatch Chile and Herb Frittata Bites
Savory, filling, and perfect for on-the-go! These frittatas are super easy to prep ahead for a busy week. They keep for up to three days in the fridge, are freezer friendly, and are easily popped into the microwave when you get hungry!
8 eggs
1/4 cup milk
8 oz shredded cheese
2 tbsp chopped cilantro
2 tbsp chopped chives
4 Hatch chiles, roasted, peeled, seeded, and chopped
Salt and pepper
Cooking spray or olive oil
- Preheat oven to 425 degrees
- Lightly coat the chiles in olive oil and sprinkle with salt
- Roast for 5-7 minutes on each side until the chiles are blistered and slightly blackened.
- Once cooled, peel the skin off of the chiles, cut them in half and scrap out the seeds.
- Chop the chiles into small chunks and set aside.
- Crack the eggs into a large bowl and whisk until blended.
- Stir in the milk, cheese, herbs, chiles, salt, and pepper. Save a little bit of cheese and chopped chiles to sprinkle on top!
- Prepare a muffin tin with cooking spray or a small amount of olive oil and fill about 3/4 of the way with the egg mixture.
- Top with cheese and chiles and slide the pan in the oven.
- Bake for 35 minutes or until golden, puffed, and aromatic.
- Serve warm with salsa and fresh avocado for a healthy and delicious meal!
** Alternatively canned hatch chiles can be used for convenience!
