Heirloom Tomato Caprese Sandwich

This Heirloom Tomato Caprese Sandwich layers juicy heirloom tomatoes, fresh mozzarella or burrata, basil, and vibrant homemade pesto on crusty bread. Fresh, simple, and bursting with flavor, it’s an easy lunch or light dinner perfect for warm summer days.

To make the pesto, combine 2 cups basil, nuts, garlic, Parmesan, and ¼ tsp salt in a food processor. Pulse until finely chopped. With the processor running, slowly drizzle in ⅓ cup olive oil until smooth.

Slice the baguette or ciabatta rolls in half and lightly toast until golden.

Arrange tomato slices on a plate. Drizzle with olive oil and season generously with flaky sea salt and black pepper. Let sit for 5 minutes to enhance the flavor.

Spread pesto on both sides of the bread. Layer mozzarella or burrata, fresh basil leaves, and marinated heirloom tomatoes onto the bread.

Finish with a drizzle of balsamic glaze and an extra pinch of flaky sea salt if desired.

Close the sandwich and serve immediately. Enjoy!

  • 1–2 large heirloom tomatoes, sliced
  • 4 oz fresh mozzarella or burrata
  • Handful of fresh basil leaves
  • ¼ cup basil pesto
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 cups fresh basil leaves
  • ¼ cup toasted pine nuts or walnuts (optional)
  • 1 garlic clove
  • ¼ cup grated Parmesan cheese
  • ⅓ cup extra virgin olive oil
  • ¼ tsp sea salt
