Kale and Summer Greens Pesto

Difficulty:

Wash and dry greens and remove any tough or stringy stems.
Place all ingredients into a food processor minus the olive oil. You may need to add the greens in batches.
Begin with the smallest amount of water, lemon juice and salt and then adjust for desired consistency and flavor.
Pulse until finely chopped, then blend while slowly adding in the olive oil. Serve and enjoy!
Ideas for using pesto: pasta, pizza, risotto, gnocchi, frittata, scrambled eggs, sandwiches, crostini, beans, hummus, soups and as a dip.

Ingredients

  • 4 cups chopped kale and other greens (spinach, chard, sorrel or arugula)
  • 1/3 cup Italian parsley leaves
  • 1/4 cup pine nuts
  • 1/4 cup walnuts
  • 1/4 grated parmesan cheese (substitute roasted cashews for non-dairy version)
  • 1/3 cup olive oil
  • 1-3 cloves garlic, peel and roughly chopped
  • 1-2 Tb lemon juice
  • 1-2 Tb water (depending on thickness desired)
  • 1 tsp salt, more to taste
  • 1 tsp black pepper
