
Lyre’s Non-Alcoholic Tom Collins
60mL (2oz) Lyre’s Dry London Spirit
15mL (0.5oz) simple syrup (1:1)*
30mL (1oz) lemon juice
60mL (2oz) soda water
Method: Add ingredients in glass. Fill with ice. Stir
Glassware: Highball
Garnish: Lemon wheel
**To make a simple syrup combine equal parts sugar and water in a small pot. Heat over medium-low until the sugar has completely dissolved. If adding herbs for flavor (basil is delicious in this recipe), steep in sugar syrup for thirty minutes after turning off heat, then remove solids.
