Mediterranean Pie

1/2 small red onion

2 gloves garlic

3 oz spinach

1/8 cup fresh parsley

1/4 cup fresh mint

1/4 tespoon ground nutmeg

salt and pepper

1 large eggs

3/4 cups crumbled feta

2 tbsp grated parmesan

1/3 cup artichoke hearts

olive oil

Use our traditional pie crust recipe for the pie crust!

  1. Preheat the oven to 400°F.
  2. Heat the oil in a sauté pan over medium heat. Once hot, add the onions and cook until soft, about 5 minutes. Add the garlic and spinach, and cook for another minute. Remove the pan from the heat.
  3. In a large bowl combine the spinach and onion mixture, parsley, mint, nutmeg, salt, and pepper, and stir to combine. Mix in the eggs, then gently stir in the feta and Parmesan cheeses. Place the bowl in the refrigerator until you’re ready to assemble the hand pies.
  4. Roll out dough on a floured surface and with a butter knife cut out 8-inch diameter circles. They do not need to be perfect, no matter the shape they will be lovely when we fold and edge with a fork.
  5. Fill each pie circle with two heaping spoonfuls of filling on the bottom 1/2. Fold the top of the dough over the filling, and push/squeeze the filling in the center slightly, and use a fork to press down and seal the edges well. Repeat with the remainder of the hand pies.
  6. Transfer the hand pies to a parchment-lined baking sheet. Brush the tops with olive oil and sprinkle with a pinch of sea salt. Bake for 15 minutes, then rotate the baking sheet and bake for another 15 minutes until the hand pies are lightly browned on top and around the edges.
