Nectarine and Arugula Salad
4 cups fresh arugula
4 cups torn butter lettuce
3 ripe nectarines, sliced
2 tablespoons hazelnuts, toasted
2 tablespoons crumbled blue cheese (optional, Feta works too)
2 tablespoons raspberry vinegar (or other fruity vinegar)
1 teaspoon maple syrup
1 teaspoon Dijon mustard
1/8 teaspoon salt
Fresh ground black pepper
3 tablespoons olive oil
In a large bowl, combine greens, nectarines, nuts and cheese, if using.
In a small bowl, whisk vinegar, maple, mustard, salt and pepper. Gradually whisk in oil until blended. You can also shake in a jar with a tight lid for about 30 seconds. Drizzle over salad; toss together and serve.
Add a protein to make it a meal. Rotisserie chicken from the Deli means you don’t even need to turn on the oven. Grilled chicken thighs would be delicious as well. Hodo BBQ Tofu Cubes would be delicious on top of this salad as well!
