Non-Alcoholic Cucumber Cooler
4 thin cucumber slices
4 mint leaves, plus more for garnish
1oz simple syrup*
1oz lemon juice
1.5oz Seedlip Garden 108
Muddle 4 mint leaves and cucumber slices in the glass.
Fill to top with ice cubes.
Add directly to the glass: simple syrup, lemon juice, and Seedlip Garden. Top with tonic water. Garnish with 3 mint leaves.
*To make a simple syrup combine equal parts sugar and water in a small pot. Heat over medium-low until the sugar has completely dissolved. If adding herbs for flavor (basil is delicious in this recipe), steep in sugar syrup for thirty minutes after turning off heat, then remove solids.
