One Bowl Vegan Banana Bread

Every vegan needs a good banana bread recipe! This one comes together in one bowl with ingredients you probably have on hand!

4 small or 3 large very ripe bananas

1/3 cup avocado oil (or other neutral oil)

1 tsp vanilla extract

1 3/4 cups all purpose or whole wheat flour

1/4 cup organic cane sugar (ensure organic for vegan friendliness)

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp pink salt

1/4 cup non-dairy milk, use only if needed

Optional: 1/3 cup chopped walnuts, chopped pecans, or chocolate chips

Preheat the oven to 350 degrees F. Grease a 9 x 5 inch loaf pan.

In a medium sized mixing bowl, mash bananas until mostly smooth. Add oil and vanilla extract, mix again. Add flour, sugar, baking powder, and baking soda. Mix until the flour is just combined. Be careful not to overmix. If your batter seems too thick, especially if you’re using a heavy flour like whole wheat, add non-dairy milk. Fold in nuts or chocolate chips if using. 

Pour batter into prepared loaf pan. Bake for 50 minutes to 1 hour or until a toothpick inserted in the center comes out clean. Allow to cool for at least 30 minutes before slicing.
