Peach and Burrata Caprese Salad
2 large or 3 small ripe peaches, sliced
1 8-oz ball of burrata
about 10-12 large fresh basil leaves
flaky sea salt (such as Maldon) and freshly ground black pepper
1-2 tablespoons extra virgin olive oil
Optional: drizzle of balsamic vinegar
Add peach slices to a serving platter, plate, or shallow dish. Tear burrata ball over the peaches, placing wet globs of cheese all over (yum!) then scatter basil leaves all over. Sprinkle salt and pepper all over. Finally, drizzle with olive oil and balsamic (if using).
Serve as is, alongside a grilled protein, or on top of toasted bread. Best eaten fresh.
What is burrata? Like mozzarella, burrata is a pasta filata cheese (meaning the curds are stretched). Burrata comes from cream mixed with broken pasta filata sitting inside a mozzarella casing. It’s creamier than mozzarella and more flavorful.
