Persian Herb Frittata (Kuku Sabzi)

Difficulty:

Finely chop herbs and shred lettuce. The mixture should be very fine for the best texture.

Heat 1 tbsp olive oil in a skillet over medium heat. Add onion and cook 3–4 minutes until softened. Add garlic and cook 30 seconds. Remove from heat.

In a large bowl, whisk eggs. Add herbs, lettuce, sautéed onion mixture, turmeric, salt, pepper, and baking powder (if using).

Stir until fully combined. The mixture should be very herb-heavy.

Heat remaining olive oil in an oven-safe skillet over medium heat. Pour in the mixture and spread evenly. Cook 5–7 minutes until the edges begin to set.

Transfer to a 350°F oven and bake for 10–12 minutes until fully set in the center.

Let cool slightly, then slice into wedges. Serve warm or at room temperature. Enjoy!

  • 6 large eggs
  • 2 cups finely chopped fresh herbs (mix of parsley, cilantro, dill, chives, or green onions)
  • 1½ cups finely shredded romaine lettuce
  • ½ medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp turmeric
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp baking powder (optional, for a lighter texture)
  • ¼ cup chopped walnuts (optional)
  • 2 tbsp dried barberries or raisins (optional)
