Corn Salad with Chile and Lime
Plastic Free July: Golden Watermelon Granita
Shop the Bulk and Produce Departments to find ingredients free from plastic! Ingredients from other departments can be found in recyclable containers (glass or metal).
5 cups golden watermelon*, seeded and cubed (about 1 mini watermelon)
3 tbsp fresh lime juice
3 tbsp granulated sugar
Optional: ¼ cup mint leaves, finely chopped
Place half of the watermelon in a food processor and puree. Strain into a 9×13 inch ceramic or metal baking dish. Repeat with remaining watermelon.
Mix sugar, lime juice, and mint if using into the baking dish with the watermelon juice. Place the dish in the freezer. Thoroughly scrape with a fork every 30 minutes until coarse crystals form, about 2 ½ hours. Scrape a final time before serving. Sprinkle with more mint, salt, or tajin for finishing.
*This recipe works with regular pink watermelon too!
