Plastic Free July: Marinara Sauce
Shop the Bulk and Produce Departments to find ingredients free from plastic! Ingredients from other departments can be found in recyclable containers (glass or metal).
3 ½ pounds tomatoes
½ cup water
½ cup olive oil
14 cloves garlic, smashed
Pinch red pepper flakes
¼ tsp dried oregano
2 tsp salt
1 large sprig of fresh basil
In a skillet (not a deep pot), heat olive oil over medium heat. Add garlic cloves. As soon as the garlic sizzles (do not allow the garlic to brown), add tomatoes. Add red pepper flakes, oregano, and salt. Stir.
Once simmering, place basil sprig on the surface and allow it to wilt. Submerge the basil once wilted. Simmer for 15 – 25 minutes, or until oil on top turns a deep orange. Remove basil spring. Taste and adjust salt if necessary. For long-term storage: allow to cool for 1 hour before transferring to glass jars filled ¾ full. Store in the freezer for up to 1 year.
