Plastic Free July: Nuts, Fruit & Honey Bars

Shop the Bulk and Produce Departments to find ingredients free from plastic! Ingredients from other departments can be found in recyclable containers (glass or metal).

3 cups mixed nuts, dried fruit, or granola (use whatever you have on hand or try something new from the Bulk Department)

½ tsp coarse sea salt, plus more for finishing

1 ½ cups liquid honey

1 tsp vanilla extract

½ tsp ground cinnamon

2 tsp white sesame seeds

Line a loaf pan (for thicker bars) or an 8×8 inch baking dish (for thinner bars) with parchment paper. 

Give nuts, dried fruit, and granola a rough chop to break up large pieces. Transfer to a heat proof bowl and sprinkle with ½ tsp salt.

Pour honey in a saucepan over medium heat. Bring to a boil, without stirring, and cook for 3 minutes. Add vanilla and cinnamon and stir to combine. Working quickly, pour honey over fruit and nut mixture and stir to combine. Transfer to the prepared pan. Press flat, making sure to fill the whole pan. Sprinkle with more salt and sesame seeds. Cool to room temperature, cut into bars, and store in an airtight container at room temperature for up to 2 weeks. Tip: store in between layers of parchment paper to prevent sticking.
