Pork & Bean Chili

Difficulty:

Heat olive oil in a large pot over medium heat. Add onion and cook 4–5 minutes until softened. Stir in garlic and cook 30 seconds.

Add ground pork and cook until browned, breaking it up as it cooks.

Stir in tomato paste and cook for 2–3 minutes to deepen flavor.

Add chopped tomatoes, beans, broth, chili powder, cumin, paprika, oregano, salt, and pepper. Stir to combine.

Bring to a boil, then reduce heat to a low simmer. Cook uncovered for 35–45 minutes, stirring occasionally, until thickened and rich.

Taste and adjust seasoning as needed.

Let sit for 10 minutes before serving for best flavor.

Serve warm. Enjoy!

  • 1 lb DFC ground pork
  • 2–3 cups on-the-vine tomatoes, chopped
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 2 tbsp tomato paste
  • 2 cups chicken broth
  • 1½ tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
