Preserved Lemon Pizza

16 oz. pizza dough (store-bought or homemade)

Za’atar (find this spice blend at the Co-op)

2 tbsp preserved lemon, chopped (we carry this too, on Aisle 4)

6 oz fresh ricotta cheese

¼ cup toasted hazelnuts

Black pepper

3 cups arugula

1 teaspoon olive oil, plus more for brushing

1 teaspoon lemon zest

Big pinch salt

Allow pizza dough to rest on the counter for 20 minutes before baking. Preheat oven according to pizza dough instructions.

After 20 minutes, spread pizza dough to desired thickness. Brush with olive oil. Sprinkle generously with za’atar. Top with all of the preserved lemon, hazelnuts, and dollops of ricotta cheese. Sprinkle black pepper over everything.

Bake pizza according to dough instructions. In the meantime, toss together arugula, olive oil, lemon zest and a pinch of salt. When pizza is done, top with arugula mixture. Slice and serve.
