Not into sweet breakfast? That's okay! Start the day with a big ol' hearty bowl of savory oatmeal with a fried egg on top of course!
1 teaspoon olive oil, divided
1/4 cup diced red and green bell peppers
2 tablespoons finely chopped onions
1 large egg
1/4 cup uncooked quick-cooking steel cut oats
3/4 cup water
salt and pepper
2 tablespoons or more shredded white cheddar cheese
Optional: chopped walnuts, sliced green onions, za'atar, hot sauce
Heat ½ teaspoon of olive oil over medium-high heat. Add peppers and onions and cook for 2 to 3 minutes, until they soften. Reduce heat to medium. Add remaining ½ teaspoon of oil and fry the egg. Cook until the whites are no longer translucent.
Bring water to boil. Add oatmeal, reduce heat a little and let it cook for about 3 minutes, until all liquid is absorbed. Turn off heat and stir in cheese, veggies, and salt and pepper to taste. Top with walnuts, green onions, za’atar, and hot sauce if you’d like.
