This recipe calls uses a sourdough starter, which gives the pancakes a greater depth of flavor. You can easily make this recipe vegan by using milk and butter alternatives. Make these pancakes your own by adding whatever toppings that you like best.
2 cups of fresh sourdough starter
1 egg(can substitue with a flax egg if making vegan)
3 Tbsp. sugar
2 Tbsp. oil
1 Tsp. baking soda
2-4 Tbsp. milk or dairy-free alternative
Butter or coconut oil for frying
- Mix together the sourdough starter, egg, sugar, oil and baking soda.
- Add milk, coconut milk, or water to thin the batter to a pancake batter consistency. Keep it somewhat thick if making waffles. Begin with 2 tablespoons liquid and add more as needed, based on the consistency of your sourdough starter.
- Heat a skillet over medium heat. Melt butter or coconut oil in the skillet. Once the skillet is hot, add ¼ cup of batter for each pancake. Cook until golden brown; flip and cook the other side.
Yield: 2 servings
