

Preheat oven to 350°F. Grease a 9×5-inch loaf pan or line with parchment paper.
Add cantaloupe to a blender or food processor and puree until smooth. Measure 1 cup of puree for the recipe.
In a large bowl, whisk together cantaloupe puree, eggs, brown sugar, oil, and vanilla until combined.
In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
Add the dry ingredients to the wet ingredients and stir just until combined. Fold in walnuts if using.
Pour batter into the prepared loaf pan and smooth the top. Sprinkle with coarse sugar if desired.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Slice and serve. Enjoy!
