Thai Inspired Lettuce Wraps

Difficulty:

Season ground turkey with salt, pepper, chili powder, ginger, and garlic. Add olive oil and turkey to the skillet and brown over medium heat. When turkey is cooked through, set aside.
Add mushrooms to the same skillet for a quick saute. When mushrooms have softened, add the turkey back to the pan and reduce heat to low. Add cabbage, carrots, and green onions. Toss mixture with thai peanut sauce and the juice of half of a lime.
On a fresh leaf of lettuce, dollop a healthy portion of your ground turkey mixture. Top with fresh cilantro, peanuts, a drizzle of sweet chili sauce, and one more squeeze of lime. Repeat this step for as many wraps as you would like.
Optional: For a vegetarian version, opt for pressing, cubing, and seasoning firm tofu with the same ingredients and air frying at 400 degrees for 11-15 minutes, flipping them halfway through for crispy tofu goodness.

  • 1 lb Diestel ground turkey or 14 oz firm tofu*
  • 2 heads romaine or butter lettuce
  • 1 Cup carrots, shredded
  • 1 Cup purple cabbage, shredded
  • 1 Cup Far West Fungi oyster mushrooms, diced
  • ½ Cup green onions, diced
  • ¼ Cup peanuts, chopped
  • 2 Tbsp fresh ginger, peeled and minced
  • 1 Tsp chili powder
  • 3 cloves fresh garlic, minced
  • 1 lime, quartered
  • 1 bunch fresh cilantro, chopped
  • ¼ Cup Sky Valley thai peanut sauce
  • ¼ Cup Thai Kitchen sweet chili sauce
  • 1 Tbsp extra virgin olive oil
  • Salt/pepper to taste
