Tomato Soup
Don't waste you day old bread! Even rock hard bread works with this recipe!
1 Large or 2 Small cans of Whole or Diced Tomatoes
2 Tbsp Olive Oil
2 Slices of Regular Sized Sandwich Bread, or about that size in Baguette, Herb Slab, any delicious bread that is too hard to eat
1 Tbsp Salt
1/4-1/3 Cup Water
1/2 Tbsp Ground Black Pepper
1/2 Onion Diced
2 Cloves Garlic Diced
1-3 Tbsp Herbs and Spices (Basil, Marjoram, Cloves, Paprika, Cumin, Oregano, Rosemary, Etc.)
Heat up skillet with 1 Tbsp Oil. Cook Onions until almost transparent, then add garlic, herbs and spices, and cook 1 more minute. Add sauteed onions and all other ingredients into a blender/Vitamix/Food Processor, and blend until smooth. Start with 1/4 Cup water and add more if the soup is too thick. Heat up in a saucepan and its ready!
Tips:
- Put in a reusable airtight container, and freeze to save for later.
- If you bread is too hard, place tomatoes, 1/4 water, and bread in blender first and allow the bread to absorb the moisture.
