Slice the Brie into ¼-inch thick pieces. Remove rind if desired (optional). Heat a skillet or grill over medium-high heat. Cook the patties 3–5 minutes per side, or until desired doneness. In the last 1–2 minutes, top each patty with slices of Brie and cover with a lid to melt slightly. Lightly butter the pre-cut ciabatta rolls and toast them in a skillet or oven until golden and crisp. Spread mustard on the bottom roll, layer arugula or greens, place the Brie-topped patty, add a slice of tomato and onions if desired, and finish with the top roll.
