Vegan Beef Loaded Sweet Potato

Have a warm and hearty Vegan dinner with this plant based recipe! With all the vitamins and nutrients your body needs, while being kind to the planet. Featuring plant based alternative meat and veggie toppings!

Begin by boiling your sweet potato for 10-12 minutes to soften before baking.

Remove sweet potato and place into a bowl of ice water to set.

Preheat oven to 425 Degrees.

Prep green onions by chopping them into slices, save for later. Mash avocado with a little salt, save for later (place a piece of parchment or plastic wrap against the surface of the mash to prevent browning). 

Heat up a pan and use your choice of neutral oil, begin cooking impossible plant based beef ground for 12-15 minutes, season to your liking with spices such as Paprika, Cumin, Coriander, Black Pepper and Cayenne or other chile powder.

Set up baking sheet, line with foil and coat with neutral oil, place pre-boiled sweet potatoes onto baking sheet, top with Impossible Plant Based Beef Grounds, ⅔ canned black beans, and green onions.

Bake loaded sweet potatoes and toppings for 10-15 minutes, remove from the oven, garnish with cilantro, avocado mash, and sour cream and salsa, if using, and enjoy!

  • ½ lb Impossible Plant Based Beef Ground
  • 2 Garnet Sweet Potatoes
  • ⅔ cups of canned Black Beans, drained
  • 1 Avocado
  • 1 Bunch Green onions
  • 1 cup chopped Cilantro
  • Optional: Vegan Sour Cream & Salsa for topping
