Watermelon Poke Bowl

Difficulty:

In a small bowl, combine tamari, sesame oil, maple syrup, rice vinegar, lime juice, green onion, toasted sesame seeds, and crispy chili oil. Whisk until thoroughly combined. 

Place the cubed watermelon in a medium size bowl, pour the tamari mixture over the watermelon, and stir to evenly coat. 

Cover the bowl with a lid or plastic wrap and place in the fridge to marinate for an hour or so.

To plate it, add a base of rice to a bowl and layer cabbage, cucumber, avocado, and marinated watermelon over top. Garnish with extra toasted sesame seeds.

Serve with nori and spicy mayo. Enjoy!

  • ¼ seedless watermelon, cubed (about 4 cups)
  • ⅓ cup gluten free tamari sauce
  • 2 tsp sesame oil
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 2 tsp lime juice
  • 2 green onion, finely chopped
  • 2 tbsp toasted sesame seeds
  • 2 tsp crispy chili oil
  • 1 cup purple cabbage, shredded
  • 1 small english cucumber, thinly sliced
  • 1 large hass avocado, thinly sliced
  • 2 cups short grain white rice, cooked & seasoned
  • Nori sheet, cut into bite sized pieces
  • 2 tbsp Sir Kensington Sriracha Mayonnaise
  • 1 tsp toasted sesame seeds, for garnish
