Whipped Feta Dip
8 ounces of your favorite feta (Athenos from the Co-op is a good option)
¾ cup plain Greek yogurt
zest from 1 lemon
2 tablespoon extra virgin olive oil, plus more for drizzling
1 teaspoon or more Aleppo pepper, or red pepper flakes
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley
2-3 tablespoons toasted pine nuts (pretty expensive) or pistachios (less expensive, buy only what you need from Bulk)
For serving: pita chips or bread, raw vegetables, roasted or grilled vegetables
In the bowl of a large food processor fitted with a blade, combine the feta, Greek yogurt and lemon zest. Turn on. While the processor is running, drizzle 2 tablespoons olive oil through the top opening, until the feta is smooth and whipped.
Transfer the mixture to a serving plate. Use the back of a spoon to create ripples on the surface. Pour a bit of olive oil all over the feta, then top with the Aleppo pepper, fresh herbs, and nuts.
Serve with pita chips or bread, raw vegetables, roasted or grilled vegetables.
