Whipped Ricotta Crostini

1 French baguette, sliced into ½ inch pieces

1 teaspoon olive oil plus more for brushing

¾ cup whole milk ricotta

1 teaspoon honey

3 tablespoon fresh herbs (such as rosemary and thyme)

1 teaspoon fresh lemon juice

1 small garlic clove

Big pinch salt

Pinch black pepper

Preheat oven to 350 degrees F. Place the baguette slices on a baking tray and brush each side with olive oil. Bake in the oven for 7-10 minutes, flipping halfway through.

Add the ricotta, honey, herbs, lemon juice, garlic, salt and black pepper to a food processor and blend until light and fluffy and whipped, about 1 minute. Once cooled, spoon the whipped ricotta onto the baguette slices and top with fruits, vegetables or herbs of your choice.
