Zucchini Tater Tots

These Zucchini Tater Tots are a crispy, crowd-pleasing snack packed with cheesy flavor and garden-fresh zucchini. Easy to make and a perfect finger food for summer gatherings, they pair deliciously with ranch, garlic aioli, or a creamy sriracha dipping sauce for an extra burst of flavor.

Preheat oven to 425°F and prepare a baking sheet with parchment paper. Use a grater to grate the zucchini over a clean kitchen towel. After grating, carefully gather the edges of the towel and squeeze the excess liquid from the zucchini over the kitchen sink. It’s important to remove as much liquid as possible to ensure a crispy tot. 

In a large mixing bowl, add eggs and whisk thoroughly. Add grated zucchini, cheddar, parmesan, breadcrumbs, Italian seasoning, garlic powder, onion powder, salt, and pepper. Stir until well combined. 

Use about one tablespoon per tater tot and shape into an oval. You should get about 20 tater tots. Bake until crispy and golden, about 20 minutes, flipping halfway through.

Serve with your favorite dipping sauce. Enjoy!

  • ¼ cup panko breadcrumbs
  • 1 ½ tsp Italian seasoning
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp fresh ground pepper
