Grilled Turkey, Brie, and Apple Butter Sandwich

Ooey-gooey brie meets sweet & rich apple butter in this satisfying hot sandwich that will be ready in minutes.

4 slices artisan rye bread, about 1/2 inch thick

2-3 tablespoons unsalted butter, at room temperature is best, but not necessary

2 tablespoons apple butter or cranberry sauce

thyme leaves

8 oz. sliced roasted deli turkey

8 oz. brie cheese, thickly sliced

2 cups loosely packed arugula

  1. Spread half of the butter on both sides of 2 slices of bread. Spread 1 tablespoon of apple butter on each. Sprinkle thyme leaves over apple butter then top with slices of turkey and then brie. Finally, arrange arugula over the brie. Butter both sides of remaining bread slices. Complete sandwich construction
  2. Heat a large cast-iron or other heavy skillet over medium-low heat. Melt 1 tablespoon butter in the pan. Add sandwiches and cook 2 to 3 minutes, or until the bread is golden brown and the cheese begins to melt. Flip and cook 2 to 3 more minutes to brown the bread. Cut the sandwiches in half and serve hot.
